Check out the eclectic academy for low cost ($30) courses. As of now I see they only go up to Elements 6, but anything done in 6 you can do in 7. I recommend Adobe Lightroom as a superb tool for professional photographers. It is great for workflow and has some outstanding editing capabilities. If you use Mac, Aperture is similar to Lightroom and preferable by some. You can download a trial version of Lightroom. Give it a try!
